High Street café Parsnips expects deli expansion to open ‘early spring’

Teddington's High Street is set to receive a new deli in the coming weeks thanks to local business owner Ben Phillips.

Parsnips Deli – named after Mr Phillips' dog – is currently known for its pancakes, pastries and cakes, however the owner was pleased to announce the business' imminent return to his original vision of "a proper deli".

This comes hot on the heels of the launch of the eatery's current location last month, 20 January, following the success of a pop-up launched in October 2022.

Despite feeling "a mixture of excitement and stress" regarding the expansion, Mr Phillips is a culinary veteran, having launched four businesses including the once-pop-up Café Benedict next door, and his co-owned, island-based D'Oyly's in Weybridge.

The entrepreneur wants to continue his previous ventures' emphasis on local produce, stating that the new store will stock "as much as possible [...] from the British Isles".

Mr Phillips credited his staff with much of his success, speaking highly of Parsnips' general managers Linda Calladine and Martin Powell.

He was also keen to commend Vittoria Vanni, a classically-trained Italian baker who provides many of the sweet treats offered in-store.

Mr Phillips described her new range of baked goods as "a bit more refined" than what is currently available.

At that moment, Ms. Vanni came running out of the unfinished deli balancing a tray of delicate patisserie-style white cakes topped with cherries, bound for the café's current iteration just next door.

Following a successful first year, (and a vacant unit next to Café Benedict) Mr Phillips and his team were able to move Parsnips pop-up into a more permanent home next door, while allowing the original pop-up location to undergo significant renovation for its new role of delicatessen. 

As he lists off what the new location will offer, it is no surprise that the deli's anticipated launch in early 2023 was pushed back.

The deli will stock "1,500 different lines," leading Mr Phillips to describe the new Parsnips as "a compact mini supermarket" for Teddington.

A standout from the local fruit, veg, meat and cheese is a traditional sweetshop counter stocking a number of old-school staples.

With a remarkable track-record of successful store openings, such as the pandemic-era pop-up offering at Café Benedict, Mr Phillips is rightfully hopeful for the future of Parsnips Deli.
