Award-winning smoked salmon trader debuts at Ted’s Market

A taste of the Scottish Highlands arrived in Teddington as Loch Stock & Two Smoking Barrells (Loch and Stock) made its debut at Ted's Market on Saturday, 10 May.
Founded by former TV and film director Justin Lennox-Bradley, Loch and Stock sells award-winning smoked salmon straight from the Scottish Lochs to Teddington.
He said: "My interest in food started with my TV career working with the UK's top chefs and food producers."
Having been a director on shows like Big Brother, I'm a Celebrity Get Me Out Of Here, and Love Island, Lennox-Bradley found inspiration for a new path during the Hollywood writers' strike.
He said: "When the writer's strike happened in Los Angeles, I started learning to smoke fish as a side interest, having worked with numerous chefs."
Determined to perfect the craft, he took curing and smoking courses at Hugh Fearnley-Whittingstall's River Cottage, where mentor Stephen Lamb encouraged him to "go forth and start smoking."
Lennox-Bradley said: "After a few attempts, I decided to see what my peers thought, and to my surprise, I won my first award at Great Taste. Now this side project has become my main passion."
Among the first of Lennox-Bradley's customers at the market on Saturday was Emma Rance, accompanied by her two-year-old son, Kit.
She said: "We moved from Croydon to Teddington about five years ago and love the sense of community.
"We knew about Loch and Stock from Twickenham and are delighted that it is now available at Ted's Market."

Loch and Stock sources its salmon fillets from sustainable producers such as Loch Duart and Wester Ross Salmon.
Lennox-Bradley said: "The fish swim in 99% water to 1% fish and are hand-reared and hand-fed without antibiotics.
"Wrasse, a small cleaner fish, is used to control parasites naturally, eliminating the need for antibiotics and supporting a healthier, more sustainable environment for the salmon."
He added: "Using a dry cure of salt and unrefined sugar, the salmon offers a slightly sweet aftertaste.
"It's as close to a Scandinavian cure as you'll find, because I'm not injecting the fillets with brine like larger producers do to increase weight and profit."
Loch and Stock's customers can enjoy toasted bagels topped with sashimi-grade Scottish salmon, paired with cream cheese, crème fraîche, or avocado. Complimentary toppings include pickled onions, capers, horseradish cream, and ground pepper.

Salmon is available for purchase as whole sides, half sides, or in pre-sliced packages.
Lock and Stock will now be a regular trader at Ted's Market, trading on the second Saturday of each month from 10am - 2pm.
